La Oficina
Five desks on a wire. The trade moves every day, and so does the paper.
The Chronicle was set up to cover food the way a market is covered: by the numbers, by the shelf and by the boat. Where a thing is grown, who lands it, which house cooks it and what the serious product is worth.
Harriet Okafor, Jefe de la oficina. Runs the wire from the first harvest report of the morning to the last closing price. Started on the produce docks and still reads the manifests.
| Escritorio | Remitir | Lo que hace |
|---|---|---|
The Exchange desk | Dinero, marcas y lo que llega a los estantes | Openings and closures, own labels, shelf prices, groups and the last mile. The busiest desk of the Bureau and the one that sets the front page most days. |
| Priya Raman | Markets, the Exchange desk | Commodity prices and the groups that move them. Files before the exchanges open. |
| Declan Moore | Retail and brands, the Exchange desk | What reaches the shelf and at what price. Has walked every aisle worth walking. |
The Source desk | Granjas, barcos y lo que desembarcan | Growers, harvest reports, fleets, olive groves and wholesale. Works to the calendar of the season, not to the calendar of the news. |
| Mateo Valdivia | Harvests, the Source desk | From the olive groves of Jaén to the avocado terraces of the Canaries. Writes to the season's calendar. |
| Astrid Lindqvist | Fisheries, the Source desk | Quotas, fleets and the cold chain. Reads the landing reports before the ministers do. |
The Evidence desk | Lo que realmente dice la ciencia | Nutrition studies, the gut, protein, ferments and sugar. Reads the paper before the press release, and says so when the study is small. |
| Dr. Lennart Bakke | The Evidence desk | A nutrition scientist who left the laboratory for the wire. Cites the sample size in the second paragraph. |
Front of House desk | Quién abre, quién cierra, quién contrata | The room as a business: new rooms, counters, the bakery trade and menu engineering. |
| Sofia Ferrante | Front of House desk | Openings, closings and who is hiring. Knows the rent of every room she writes about. |
The Bar Trade desk | Las bebidas como negocio | The wine market, breweries, the coffee trade and distillers. Prices, volumes and who is buying whom. |
| Callum Reid | The Bar Trade desk | Breweries, distillers and the coffee trade as business. Counts the barrels, not the tasting notes. |
What the wire carries
A figure, a source and a date on every piece. A price without a market and a claim without a study do not go on the wire.
What never goes on the wire
Brand launches dressed as news, discount listings and pieces carrying another title's furniture. They are dropped whole, not shortened.
The commodity board
The prices published on the Commodities page are the closing figures of the day, and they are replaced, not edited.
