Like cocoa powder, coffee enhances the flavor of chili. Its bitterness intensifies the chili's spiciness, balances the fat in the meat, and pairs well with spices like cumin or cayenne. Just a small amount is enough to add complexity to the dish.
For chili, it's best to use instant coffee powder, not ground coffee beans. It's a concentrated version, designed to dissolve quickly in liquids. Bakers use it to enrich cakes and pastries, and as a flavor enhancer in dry barbecue marinades. Ground coffee, on the other hand, is much coarser and can be unpleasant when eating chili.
Add approximately one tablespoon of instant coffee to the pot at the same time as the other dried spices, and taste to adjust the amount. To further enhance the flavor, you can combine it with a touch of cocoa powder or a pinch of cinnamon.
