The tomato sandwich with fried green tomatoes, Southern style
Fried green tomatoes, with their crisp texture and warm acidity, can replace fresh tomatoes in a Southern-style tomato sandwich.
The classic tomato sandwich features soft bread, mayonnaise, salt, and ripe tomatoes. Swapping the tomatoes for fried green tomatoes results in a bite with that comforting Southern touch.
Fried green tomatoes are harvested before they are fully ripe, breaded, and fried. In Southern cuisine, they are served with remoulade sauce, pimento cheese, or grits, among other accompaniments. In sandwiches, they are placed between slices of bread spread with mayonnaise, often accompanied by other fresh vegetables. The result is crispy on the outside and soft on the inside.
Green tomatoes are also more acidic than ripe ones, and frying them gives them a warm, savory flavor. Ripe tomatoes don't have to be thrown away either: both can be combined in the same sandwich. With bacon and lettuce, you get a BLT version.
Other Southern vegetables, such as kale or fried okra, also work well. For a more substantial meal, you can add protein like fried shrimp with remoulade sauce, buttermilk fried chicken, or fried catfish.
To intensify the flavor, pimento cheese, another southern classic, is spread with mayonnaise on the bread, adding a spicy and slightly acidic touch. Alternatively, you can prepare a southern-style aioli with Cajun seasoning, Creole mustard, or smoked paprika.
As for the seasoning, the curry powder mixed into the batter gives the tomatoes a subtly spicy and aromatic touch. If you're looking for a light smoky flavor, simply add smoked paprika to the batter.
