Poppy seed cake with streusel – Grandma's classic recipe is experiencing a revival with our simple recipe

  • 250 g Mehl
  • 150 g Zucker
  • 2 El Bio-Zitronenschale
  • 1 Eigelb
  • 150 g Butter
  • 2 Tütchen Sahnepuddingpulver
  • 750 ml Milch
  • 60 g Zucker
  • 200 g Mohn
  • 1 Eiweiß
Method · 1 h 30 min
  1. Ei trennen, Eiweiß für die Füllung aufheben. Für den Teig Mehl, Zucker, Zitronenabrieb und Eigelb in eine Schüssel geben. Mit den Quirlen des Handrührers vermengen. Dabei die geschmolzene Butter nach und nach zugeben. Die Hälfte des Kuchenteigs in die gefettete Backform geben und mit den Fingern zum Kuchenboden festdrücken. Kuchenboden und restlichen Teig in den Kühlschrank stellen.
  2. Inzwischen Puddingpulver mit etwa 100 ml der kalten Milch glatt rühren. Übrige Milch aufkochen, vom Herd nehmen, angerührtes Pulver und Zucker mit einem Schneebesen einrühren. Mohn einrieseln lassen und gründlich unterrühren. Mohn-Pudding-Mischung etwa eine Minute unter Rühren kochen lassen. Mohnmischung vom Herd nehmen und 5 Minuten quellen lassen. Danach in eine Schüssel füllen und etwa 10 Minuten abkühlen lassen.
  3. Eiweiß mit den Quirlen des Handrührers zum festen Eischnee schlagen. Vorsichtig nach und nach unter den abgekühlten Mohn-Pudding heben. Mohn-Pudding auf den Teigboden in die Form geben und gleichmäßig verstreichen. Restlichen Teig als Streusel auf dem Kuchen verteilen.
  4. Mohnkuchen im heißen Backofen bei 175 Grad Umluft auf der 2. Schiene von unten etwa 60 Minuten backen.

Sachets of instant pudding powder (for cooking)

  • Separate the egg, reserving the egg white for the filling. For the dough, combine the flour, sugar, lemon zest, and egg yolk in a bowl. Mix with an electric mixer, gradually adding the melted butter. Press half of the dough into the greased baking pan to form a base. Refrigerate the base and the remaining dough.
  • Meanwhile, whisk the pudding powder with about 100 ml of the cold milk until smooth. Bring the remaining milk to a boil, remove from the heat, and whisk in the prepared powder and sugar. Gradually stir in the poppy seeds. Cook the poppy seed pudding mixture for about one minute, stirring constantly. Remove the mixture from the heat and let it stand for 5 minutes. Then pour it into a bowl and let it cool for about 10 minutes.
  • Beat the egg whites with an electric mixer until stiff peaks form. Carefully fold them into the cooled poppy seed pudding. Pour the poppy seed pudding onto the pastry base in the tin and spread it evenly. Sprinkle the remaining dough over the top of the cake as streusel.
  • Bake the poppy seed cake in a hot oven at 175 degrees Celsius (convection oven) on the second rack from the bottom for about 60 minutes.
