Penne with Gorgonzola Sauce

  • 150 g Blattspinat
  • 200 g Penne
  • Salz
  • 60 g Kerne- und Saaten-Mix
  • 1 weiße Zwiebel
  • 1 El Sonnenblumenöl
  • 150 g Schlagsahne
  • 150 g Gemüsebrühe
  • 100 g Gorgonzola
  • Pfeffer
  • Muskat
Method · 25 min
  1. Spinat in einem Sieb auftauen lassen und mit den Händen gut ausdrücken. Nudeln in kochendem Salzwasser nach Packungsanweisung bissfest kochen. Den Kerne-Mix in einer Pfanne ohne Fett 2–3 Minuten goldbraun rösten.
  2. Zwiebel fein würfeln. Öl in einer Pfanne erhitzen und die Zwiebeln darin 2 Minuten glasig dünsten. Mit Sahne und Brühe aufkochen und 2–3 Minuten cremig einkochen lassen. Gorgonzola in die Sauce zupfen und schmelzen. Spinat zugeben, darin erwärmen, Sauce mit Salz, Pfeffer und Muskat würzen. Nudeln abgießen, mit 50 ml Nudelwasser in die Sauce geben und durchschwenken. Mit dem Kerne-Mix und Pfeffer bestreut servieren.

Thaw the spinach in a sieve and squeeze out the excess water with your hands. Cook the pasta in boiling salted water according to the package instructions until al dente.

Roast the seed mix in a pan without oil for 2-3 minutes until golden brown.

Finely dice the onion. Heat oil in a pan and sauté the onions for 2 minutes until translucent.

Bring the cream and stock to a boil and simmer for 2-3 minutes until creamy. Crumble the Gorgonzola into the sauce and melt. Add the spinach, heat through, and season with salt, pepper, and nutmeg.

Drain the pasta, add it to the sauce along with 50 ml of the pasta water, and toss to combine. Serve sprinkled with the seed mix and pepper.
