Thai Iced Coffee

My Thai iced coffee is a luscious cold treat made by blending coffee and coconut milk ice cubes flavored with condensed milk, vanilla, and coconut sugar. Easy and so satisfying, not to mention the caffeine kick to get you going!

Thai Iced Coffee
Ingredients · Servings 4
  • 12 ounces (345ml) strong coffee, (frozen in a standard ice cube tray)
  • 12 ounces (345ml) coconut milk, (frozen in a standard ice cube tray)
  • 1 cup (240ml) sweetened condensed milk
  • 1 tablespoon (5ml) vanilla extract
  • 2-3 tablespoons coconut sugar ((optional))
  • whipped cream (for optional topping)
Method · 240 min
  1. Pour 12-16 ounces of strong cold coffee into a standard ice cube tray and 12-16 ounces of coconut milk in another standard ice cube tray. Freeze until solid (this may take about 3 to 4 hours, depending on your freezer).
  2. Remove the ice trays from the freezer when completely set. Leave at room temperature for about 10 minutes so it's easier to remove the ice cubes.
  3. Place the ice cubes in a blender, add condensed milk and vanilla, and blend until creamy and smooth. It's OK if not all of the cubes blend. You may have to do this in two batches.
  4. Pour into glasses, top with whipped cream, and sprinkle with coconut sugar. Serve immediately.

There is Thai iced coffee and blended version. I prefer my blended recipe.

What’s the difference? This latter is made by blending coffee and coconut milk ice cubes, which makes for a creamy, smoothie-like texture.

While I can’t call it a smoothie because it doesn’t involve fruit or vegetables, it definitely makes for one LUSCIOUS treat! I love it!

And so do my family and friends. I can never make enough to satisfy their cravings, not to mention mine.

This is my ANYTIME favorite—my guilty pleasure. Spike it with rum, and I am in coffee heaven!

Just one taste of this drink, and you’ll understand why. It starts by blending frozen coffee and coconut milk cubes with creamy condensed milk, then topping it with whipped cream and, for a nutty flavor, coconut sugar.

Ingredients

  • Coffee – Strong coffee frozen in an ice cube tray is the base of this economical substitute for expensive coffee shop specialty drinks. You can brew it or use instant. I won’t tell.😉
  • Coconut Milk – Frozen coconut milk gives a creamy texture and tropical flavor that ramp up the coffee and turns it into a dream smoothie. Homemade coconut milk tastes best, but the stuff that comes in the carton also works.
  • Condensed Milk – Intensify the creamy goodness without watering down your coffee.
  • Vanilla – The mother of all flavor enhancers gives your coffee an extra creamy aroma you might otherwise lose because the drink is frozen.
  • Optional Additions – Whipped cream and coconut sugar deliver a gorgeous presentation while improving on perfection.

How to Make Blended Thai Iced Coffee

Follow along with my easy ingredients and instructions to learn how to make blended Thai Iced coffee inside your own kitchen.

  • Freeze – Pour about 2 cups of cold coffee into an ice cube tray and freeze. It may take 3-4 hours, depending on your freezer. Freeze your coconut milk the same way. (Photo 1)
  • Remove ice trays from the freezer when they’re completely set. Leave at room temperature for about 5-15 minutes, depending on room temperature. It makes getting the frozen goodness out of the ice cube trays easier. (Photo 2)
  • Blend – Place the frozen coffee and coconut milk cubes in the blender, add condensed milk and vanilla, and blend until creamy and smooth. It’s okay if not all the cubes blend, and you might have to do it in two batches. (Photos 3-4)
  • Serve – Pour the blended coffee into glasses and top with whipped cream and sugar. Serve immediately.

Tips and Tricks

  • Take the frozen coffee and coconut milk ice cube trays out of the freezer 10-15 minutes before blending to ensure easier blending.
  • If the coffee mixture is too thick, try adding about a ¼ cup of coconut milk to the blender.

What to Serve With it

Coffee goes perfectly with dessert. If it’s springtime, have a strawberry pound cake.

For summertime, enjoy it with a banana pudding cake. Autumn begs for a sweet potato pie or butter pecan layer cake, and winter needs a red velvet cake.
