If you share my love for Hong Kong food, the Old School Hong Kong Delights buffet at AquaMarine is a must-try for you as well! Available from now till 30 April 2019 , this classy buffet transports you to old Hong Kong, with nostalgic renditions of Cantonese classics.

With their lunch buffet priced at $60++ , dinner buffet at $73++ every Monday to Thursday , and $83++ every Friday to Sunday , expect to be treated to a luxurious selection. Exclusively prepared for the dinner buffet, their Baby Lobster in “Bi Feng Tang” Style was the crème de la crème of this epicurean feast. Just like the popular “Bi Feng Tang” crab , these lobsters were stir-fried with garlic, scallions, chilli, and black beans.

Garlic and seafood make a proven pairing, and I loved how the fried garlic teased out the sweetness of the lobsters. But what truly brought the dish together were the black beans, which brought to light its presence through occasional whiffs of fermented savouriness. With its simple taste, it melded the distinct accents of garlic and chilli into a cohesive duo.

Another must-try dish is their Braised Beef Rib with “Mui Choy” , which was swept up as quickly as their lobsters. I was surprised by how tender the braised meat was, as it effortlessly slipped apart in my mouth.

The patient braising as well brought out more aroma, as every bite burst forth in a terrific medley of rich and fatty flavours. The mui choy – or preserved vegetables – made a pleasant touch as well, bolstering the luscious meat with its sweet and savoury notes.

What impressed me the most about AquaMarine is how meticulously they have recreated the Hong Kong of before. It’s in their specially curated menu, which offers old-school dishes such as Traditional Quail Egg Siew Mai and Chui Chow Oyster Congee .

With retro Cantonese hits playing in the background, sepia-toned photos, and signboards adorned with traditional Chinese characters, stepping through the doors of AquaMarine truly reminded me of the old Hong Kong I’ve seen in films. If you are searching for more legit HK food, drop by Mui Kee Congee at Shaw Centre. A household name in Hong Kong, this restaurant soothes your palate with bowls of rich and silky congee.

Be sure to check out their premium Threadfin Belly ($18++) congee! Since their threadfin is wok-fried before being mixed into the porridge, a tantalising wok hei perfumes the flavoursome congee.
