Whole roasted leeks with honey, feta cheese and rosemary

A tasty side dish where the leek is roasted whole and topped with honey, crumbled feta cheese and rosemary, perfect to serve warm as a snack or appetizer.

Ingredients · Servings 4
  • 2 leeks
  • 2 tablespoons honey
  • 1 tbsp vinegar
  • 150 g feta cheese
  • 2 sprigs rosemary
  • 3 tbsp olive oil
  • salt
  • black pepper
Method · 45 min
  1. Set the oven to 220 degrees.
  2. Place the leeks in a baking dish and roast in the oven until they have a nice color and an internal temperature of 90 degrees.
  3. Take out the leeks and cut them lengthwise. Remove the soft core and cut into pieces/stumps.
  4. Mix honey and vinegar. Place the leeks on a plate and drizzle the honey mixture over them.
  5. Top with crumbled feta cheese and finely chopped rosemary. Sprinkle with salt and ground black pepper. Finish by drizzling with olive oil. Serve warm.
