It Can Wait: A Recipe for Pastries That Don't Go Stale

This is a recipe for a pastry that never goes stale, with its name, reputation, and taste. Fresh yeast, dissolved in warm milk and water with granulated sugar, slowly begins to activate, and it rises beautifully in the oven.

These pastries don't go stale easily when stored in an airtight container, trust me.

For the dough:

  • 1 egg
  • 1/2 cup yogurt
  • 1/2 cup olive oil
  • 3/4 cup warm milk
  • 1/4 cup lukewarm water
  • 1/2 packet of fresh yeast
  • 1/2 tablespoon powdered sugar
  • 6-6.5 cups of flour
  • 1/2 teaspoon salt

For the inside:

  • 300 grams of low-fat white cheese
  • 1/4 bunch of parsley

For the topping:

  • 1 egg yolk
  • 1 tablespoon of sunflower oil
  • 1 teaspoon of nigella seeds

The Secret to a Pastry Recipe That Stays Fresh

The number of pastries you make may vary depending on their size. Pay attention to the dough's rising time, and ensure all ingredients are at room temperature except for those that need to be lukewarm. Add the flour gradually and continue kneading the dough. The amount of flour used may vary by about half a cup.

How to Make Pastry That Stays Fresh?

  • For bread rolls that stay fresh, pour lukewarm water and milk into a large mixing bowl. Add fresh yeast and granulated sugar, mix, and let it sit for about 10 minutes to activate the yeast. Once the yeast has completely dissolved, add olive oil, yogurt, egg, and salt. Mix all the ingredients by hand.
  • Gradually add the sifted flour and salt, and begin kneading until the dough comes together.
  • Once you have a soft, non-sticky dough, cover it with a damp cloth and let it rest at room temperature for about 50 minutes.
  • For the filling, mix all the ingredients together. Tear off egg-sized pieces from the risen dough and flatten them in your palm. Place about a teaspoon of the prepared filling in the center of each piece, then roll them up to close.
  • Arrange the dough pieces on the baking tray with some space between them, then brush them with egg yolk whisked with sunflower oil. Let them rest for 10-15 minutes for the final rising process, also known as tray proofing.
  • Bake in a preheated oven at 180 degrees for 25-30 minutes. Enjoy with your loved ones. The non-stale pastries are ready! Bon appetit.
