  • 40 g of yellow egg yolks
  • 7 tablespoons of powdered sugar
  • a pinch of salt
  • finely grated zest of 1 organic lemon
  • 500 ml of rice milk
  • 2 tablespoons of flour

Lactose-free custard, procedure

In a small saucepan, heat the egg yolks and sugar, then incorporate the flour and salt into the smooth mixture. Cook for a few moments, stirring constantly, before adding the rice milk, which you will gradually add, constantly emulsifying the mixture.

Once the cream has reached the desired consistency, flavor it with the lemon zest and use it as you wish.
