Ingredients · Servings 12 pieces
- 150 g butter
- 150 g semi-coarse flour
- 150 g caster sugar
- 1 teaspoon baking powder
- 2-3 eggs (as needed)
- 2 tablespoons cocoa
- 75 g dark chocolate (broken into pieces)
- Cream:
- 100 g powdered sugar
- 250 g butter
- 1 vanilla sugar
- 300 ml milk
- 1 vanilla pudding powder
- 1 pastry icing (100 g)
- food coloring (as desired)
Method · 1 h 25 min
- Preheat the oven to 180 °C.
- Beat the sugar with the softened butter. Then gradually beat in 2 eggs and 2 tablespoons of cocoa. If the dough seems too stiff, add 1 more egg.
- Whisk everything until smooth. Sprinkle in the sifted flour mixed with baking powder.
- Knead a smooth dough. Finally, stir in the chocolate broken into small pieces.
- Fill the prepared muffin tins 2/3 full. It is always better to use sturdy tins (preferably silicone ones). These are less likely to move and ruin the shape of the cupcakes.
- Bake for about 20-25 minutes. Check for doneness with a skewer inserted into the cupcake and it should come out dry. After removing from the oven, let the cupcakes cool.
- Make a thick pudding from the milk and pudding powder. Let it cool. Also take the butter for the cream out of the fridge so that it has time to soften.
- Beat the softened butter with the sugar until foamy. Beat in the cooled pudding. Color with cocoa or food coloring according to your imagination.
- Decorate the surface of the cupcakes with the icing and let it set.
- Then, using a pastry bag, apply the butter-custard cream to the cupcakes.
