“Chicken sauce without chicken”, aka fruity Quorn sauce

  • 1kpl sipuli
  • 1kpl porkkana
  • 1ps quorn-kuutioita
  • valinnaisia pakastevihanneksia, esim. vihreät pavut / herneet / paprikasuikaleet...
  • öljyä paistamiseen
  • n. 1/2tl curry
  • n. 1/4tl kurkuma
  • ripaus valkopippuria, persiljaa ja rosmariinia
  • n. 3dl vettä
  • 1kpl appelsiini
  • 1/2tölkki säilykepersikkakuutioita (mehussa)
  • 1prk (2dl) curry-kaurakerma
  • suolaa maun mukaan (itse laitoin päälle 1 tl)
  • maissitärkkelystä (maizena)
Method
  1. Kasvisversio hedelmäisestä broilerkastikkeesta. Ei ole täysin vegaaninen, koska quornissa on kananmunaa, mutta toki quornin voi korvata jollain vegaanisella kanaa muistuttavalla kasviproteiinilla!
  2. 1. Pilko sipuli ja porkkana (melko ohuiksi siivuiksi). Kuullota pannulla öljyssä ensin sipulia ja mausteita.
  3. 2. Ota sivuun ja lisää sitten öljyä ja quorn-kuutiot. Kuullota hetki. Lisää sitten porkkana ja pakastevihannekset. Kuullota vielä hetki ja lisää takaisin sekaan myös kuullotettu sipuli.
  4. 2. Lisää pannulle seuraavaksi vesi (n. 3 dl, mutta tämä riippuu pakastevihannesten määrästä. Nestettä saa olla melko reilusti, koska kastike saostetaan lopuksi Maizenalla), puolikkaan appelsiinin mehu ja säilykepersikoiden mehua.
  5. 3. Anna poreilla kunnes kasvikset ovat kypsiä. Pilko sillä aikaa toinen puolisko appelsiinista paloiksi.
  6. 4. Lisää sitten kaurakerma, noin puoli purkkia säilykepersikkakuutioita, appelsiinikuutiot ja suolaa maun mukaan (itse laitoin noin 1 - 1,5 tl), maistele sopiva suolaisuus.
  7. 5. Lisää lopuksi poreilevaan kastikkeeseen Maizenaa sen verran, että kastike saostuu sopivaksi.
  8. 6. Tarjoile esim. riisin tai perunan kanssa.

A vegetarian version of a fruity chicken sauce. Not completely vegan because Quorn contains eggs, but of course you can replace Quorn with some vegan plant protein that resembles chicken!

1. Chop the onion and carrot (into fairly thin slices). First, sauté the onion and spices in oil in a pan.

2. Set aside and then add the oil and quorn cubes. Sauté for a moment. Then add the carrot and frozen vegetables. Sauté for a moment more and add the sautéed onion back in.

2. Next, add water to the pan (about 3 dl, but this depends on the amount of frozen vegetables. There should be quite a bit of liquid, because the sauce will be thickened with cornstarch at the end), the juice of half an orange, and the juice of the canned peaches.

3. Simmer until the vegetables are cooked. Meanwhile, chop the other half of the orange into pieces.

4. Then add the oat cream, about half a jar of canned peach cubes, orange cubes and salt to taste (I added about 1 - 1.5 teaspoons), taste for the appropriate saltiness.

5. Finally, add enough cornstarch to the bubbling sauce to thicken the sauce appropriately.

6. Serve with rice or potatoes, for example.
