Zucchini rolls

- Wash the zucchini thoroughly and trim both sides. Cut them into thin slices lengthwise.
- Butter a baking dish and arrange the zucchini slices in it. Bake them in a preheated oven at 180°C (350°F) for about 15 minutes, turning them halfway through for even cooking.
- In a bowl, combine the ground beef, egg, Parmesan cheese, a pinch of salt, and pepper. Mix well until smooth.
- Form balls with the meat mixture, as many as you have zucchini slices. Wrap each zucchini slice around a meat ball, securing the roll with a toothpick.
- Arrange the rolls in the buttered baking dish and bake them in the oven for another 15 minutes at 180°C.
- Meanwhile, chop the tomatoes into large pieces. Once the rolls are cooked, place a tomato piece on each one and serve immediately, garnished with fresh basil leaves.
To make your zucchini rolls even more flavorful, you can add aromatic herbs like thyme or oregano to the filling. If you prefer a vegetarian version, replace the meat with ricotta and spinach. For a touch of crunch, try adding chopped walnuts to the filling. Baked zucchini rolls can also be served cold, perfect for a picnic or an outdoor lunch.
Zucchini rolls can be stored in the refrigerator for a couple of days. Be sure to store them in an airtight container to maintain their freshness.
