Zucchini chicken skewers

Clean the chicken breasts and mix all the ingredients for the marinade in a bowl. Dice the chicken and roll it in the marinade, then refrigerate for at least 30 minutes (or overnight) to allow the flavors to blend well.

  • Cut the zucchini into finger-thick rings, the pepper into larger, 3 cm pieces, and the purple onion into strips.
  • First skewer the zucchini, then the chicken, then the peppers, and finally the onions, and repeat this until all the ingredients are used up.
  • Then cook on medium-high heat or on a grill, or in the absence of one, on a grill pan, for 3 minutes per side. If you're listening to me, then definitely drink something cold and bubbly with it!

This zucchini chicken skewer is a real summer hit: it can be thrown together, grilled in seconds, and everyone will love it! With a refreshing lemon-garlic marinade, crispy zucchini, sweet peppers, and purple onions - perfect for a barbecue party, or even a quick weeknight dinner. And to be really cool, sip on a cold, fizzy drink with it!

Tip: You can also bake the skewers in the oven. In this case, preheat the oven to 200°C and bake the skewers for 20 minutes until golden brown, turning halfway through.

Tip 2: if you're afraid of pricking your finger with the skewer, place it on a board that you want to pull on and insert it there on a stable, hard surface. It's a little more time-consuming, but definitely safer.
