Recognition of the tradition by Repsol

Tradition is booming, and the Repsol Guide has chosen to recognize those classic establishments that have withstood all adversity with its new "suns." For this reason, it has awarded more than 300 of these distinctions to long-established venues, a list of which you can see here.

Some of them are over a century old, such as Casa Enrique (Granada), Casa Montoliu (Tremp, Lleida), La Taberna de Antonio Sánchez, and Antigua Pastelería del Pozo, both in Madrid. Also in the capital is Casa Mingo, famous for its roast chicken. With these long-established gems, presented this Monday in Córdoba, the Repsol Guide recognizes the work of establishments where recipes remain unchanged, even as experience enriches them year after year.

Also receiving recognition are the bars, where the product, the customs, the decoration and even the accent of the patrons and the staff place you in the place; the ovens where some sweets are emblematic of a population, but they do not forget the young professionals who fight for their territory.

Like Zuriñe García at El Txakoli de El Paladar (Portugalete, Bizkaia), Mario Pizarro and David Ripalda at Matria in Jerez, La Majada in Artenara (Las Palmas), the signature sandwiches with their own livestock and bread from local bakeries at Chichalovers in Santiago de Compostela, or the commitment to appetizers at Doble and Gilda in Madrid.

Traveling with traditional Spanish restaurants also means discovering places like Taberna Terrón, in Badajoz, where the menu is still in pesetas; Silvestre (Vila-Real, Castellón) with its medieval menu, or sitting at a table with a charcoal brazier in Gafiq in Benalcázar (Córdoba).

With these more than 300 new Soletes con Solera spread throughout Spain, the Guía Repsol distinction exceeds 4,400 yellow badges in its tenth edition, in its vocation to reach the entire geography.
