Dried meat: a practical option for tacos around the fire
Pre-cooked and ready to use, dried meat eliminates the need to handle raw meat in the camp, while also offering an intense umami flavor.
While beef jerky isn't a traditional taco filling, it works wonderfully for cooking over a campfire. Because it's precooked, it eliminates the need to prepare raw cuts, which is laborious and impractical in that context. Its flavor is intense: it's made by marinating lean cuts in a flavorful blend of soy sauce, Worcestershire sauce, garlic, and spices before cooking and dehydrating them. The result is a snack packed with the aroma and flavor of meat.
Preparing it is simple. Crumble the dried beef into small pieces, mix it with your favorite taco ingredients in a pan, add broth or canned beans to rehydrate, and heat until the mixture is ready to serve.
Dried beef has a chewy texture that makes it ideal as a snack, but not perfect for a plain taco. Rehydrating it is essential: you can do this while cooking by adding liquid, or soak it in broth for fifteen minutes before cooking. If the beef is very thick, it will need more time.
Due to its high sodium content, use spices and seasonings instead of salt to flavor it. It pairs well with many taco toppings: fresh lime, herbs, or pickles enhance its bold flavor without being overpowering.
