La regla 3-2-1 que debes conocer para ahumar carne

Ahumar carne puede resultar abrumador para principiantes, y la regla 3-2-1 ofrece un punto de partida sencillo para unas costillas tiernas.

Smoking meat requires choosing a smoker, the wood or fuel, the temperature, and the cooking time. It's easy to dry out the meat or overcook it, and even experienced cooks resort to tricks to achieve good results.

The 3-2-1 rule is easy to remember and combines tender, fall-off-the-bone ribs with smoky flavor. To follow it, season the ribs and smoke them for three hours at a low temperature. Then, wrap them in aluminum foil or butcher paper and smoke them again for another two hours. Traeger recommends adding liquid, such as apple juice, along with honey and brown sugar, because it tenderizes them. Finally, unwrap them, brush them with sauce, and cook them for one more hour; this reduces the sauce and browns the edges slightly.

This method usually produces a pink ring around the edges of the meat, caused by nitric oxide, which is generated through a chemical reaction with myoglobin. Many believe that this ring indicates proper smoking. If it doesn't appear on the first try, but the ribs are cooked to your liking, the method has worked.

The method works best with pork ribs. Baby back ribs cook faster and can overcook, so Armadillo Pepper recommends the 2-2-1 method for them. Reducing the smoking time by one hour helps prevent these thinner ribs from drying out and becoming tough.

The 3-2-1 rule requires a total of six hours, so it's best to plan ahead to ensure the ribs are ready on time. It's an easy way to get tender ribs.
