Why it's not a good idea to let cracked eggs rest before scrambling them
According to chef Anthony Bourdain, leaving eggs cracked before scrambling them causes them to turn gray and clump together instead of becoming fluffy.
According to The Washington Post, Americans consume about 279 eggs a year. While there are many effective ways to prepare them, some bad habits should be avoided. One of these was pointed out by chef Anthony Bourdain.
Bourdain explained to Insider that you should never leave raw eggs to be scrambled. It's best to crack them into a bowl right before putting them in the hot pan.
Bourdain also suggested a simple recipe: he only uses salt, pepper, and butter. To cook them, it's best to use a wooden spoon, which withstands heat better than other utensils and handles such a delicate food gently.
The eggs need to be stirred frequently to oxygenate them, which is necessary for them to soften. To beat them, a wire whisk separates the yolks and whites well, resulting in a smooth mixture.
To get fluffy eggs, beat until bubbles start to appear and the mixture has a uniform yellow color.
