Its lightness makes it ideal for cold preparations, as heat can alter its flavor and give it a bitter note. Its nutty flavor enhances other ingredients and pairs well with vinegar in a simple vinaigrette, though it also serves as a base for more complex flavors.
Nutty dressings pair well with strongly flavored ingredients, such as bitter winter vegetables and leeks. They also complement fruits and mild cheeses, like Manchego and Mahón, on a salad.
Besides dressing salads, walnut oil has other uses. Seamus Mullen, a chef and culinary director in California, uses it as a finishing touch: "I love the aromas of walnuts to add the finishing touch to delicate fish dishes."
If you can't find walnut oil, you can achieve a similar effect with roasted walnuts infused in canola oil, according to chef Mike Lata.
Walnut oil is also a healthy option: it is rich in omega-3 fatty acids, important for brain function, and in that respect it surpasses olive oil.
