Salsiccia with chard and mustard onions
Ingredients · Servings 4
  • 300 g weiße Zwiebel
  • 2 El helle Senfsaat
  • 6 Feige
  • 30 g Zucker
  • 1 Lorbeerblatt
  • 300 ml weißer Portwein
  • 100 ml Weißweinessig
  • nach Belieben Salz
  • nach Belieben Pfeffer
  • 900 g Mangold
  • 60 g weiße Zwiebel
  • 2 El Olivenöl
  • 10 g Butter
  • nach Belieben Salz
  • 100 ml Mineralwasser
  • 1 Bio-Zitrone
  • nach Belieben Pfeffer
  • 16 Lorbeerblatt
  • 8 Salsiccia
  • 3 El Pflanzenöl
Method · 35 min
  1. Zwiebeln vierteln und in feine Streifen schneiden. Senfsaat in einer Pfanne rösten, bis sie zu springen beginnt. Feigen in feine Scheiben schneiden.
  2. Zucker in einem Topf mit schwerem Boden hellbraun karamellisieren. Lorbeer, Zwiebeln und Senf zugeben und unter Rühren kurz dünsten. Mit Portwein und Essig auffüllen und offen bei milder Hitze ca. 20 Minuten garen, bis die Flüssigkeit fast vollständig verkocht ist. Feigen zugeben und 5-10 Minuten unter rühren garen. Mit Salz und Pfeffer würzen.
  3. Mangold putzen, Blätter von den Stielen und den Mittelrippen schneiden. Stiele und Rippen waschen und quer in feine Streifen schneiden. Mangoldblätter klein schneiden. Zwiebeln in feine Streifen schneiden.
  4. Für die Salsicce je 2 Lorbeerblätter mit etwas Küchengarn um 1 Wurst binden. Öl in einer Pfanne erhitzen, Bratwürste darin bei starker Hitze 8 Minuten braten, dabei mehrmals wenden.
  5. Für das Mangoldgemüse Olivenöl und Butter in einem Topf erhitzen. Zwiebeln und Mangoldstiele darin 4 Minuten dünsten, mit Salz würzen. Mangoldblätter und Mineralwasser zugeben und bei mittlerer Hitze 2-4 Minuten mitgaren. Zitronenschale unterrühren. Mit Pfeffer würzen.
  6. Salsicce mit dem Mangold in einer Pfanne anrichten. senfzwiebeln dazu servieren. Dazu passt Ciabatta.

Mustard onions

ml ml white port wine (or red port wine as a substitute)

ml ml white wine vinegar, to taste, salt to taste

as desired, as desired, pepper

Swiss chard vegetable

The Olive Oil

as desired as desired salt ml ml mineral water

Organic lemon (finely grated zest of 1-2 fruits)

as desired, as desired, pepper

small bay leaves

Salsicce (coarse Italian fennel sausage; approx. 80 g each; alternatively, coarse bratwurst)

Quarter the onions and cut them into thin strips. Toast the mustard seeds in a pan until they start to pop.

Slice the figs into thin slices.

Caramelize the sugar in a heavy-bottomed saucepan until light brown. Add the bay leaf, onions, and mustard, and sauté briefly while stirring. Pour in the port wine and vinegar, and simmer uncovered over low heat for about 20 minutes, until the liquid has almost completely evaporated.

Add the figs and cook for 5-10 minutes, stirring occasionally. Season with salt and pepper.

Clean the chard, cut the leaves from the stalks and midribs. Wash the stalks and midribs and cut them crosswise into thin strips.

Chop the chard leaves into small pieces. Slice the onions into thin strips.

For the salsicce, tie 2 bay leaves around each sausage with kitchen twine. Heat oil in a pan and fry the sausages over high heat for 8 minutes, turning them several times.

- For the chard, heat olive oil and butter in a pot. Sauté the onions and chard stalks in it for 4 minutes, season with salt.

Add the chard leaves and mineral water and cook over medium heat for 2-4 minutes. Stir in the lemon zest. Season with pepper.

Arrange the salsiccia and chard in a pan. Serve with mustard onions. Ciabatta bread goes well with this.
