Pack It Up, PSL—Our Butternut Squash Latte Will Be Your Favorite Fall Drink
Ingredients · Servings 1
  • 6 oz. whole milk
  • 1 cardamom pod
  • 2 tbsp. store-bought butternut squash puree
  • 1 tbsp. light brown sugar
  • 1 tsp. allspice berries
  • 1 1/2 oz. freshly brewed espresso or 2 oz. freshly brewed coffee
  • A pinch of kosher salt
  • 1/8 tsp. ground turmeric
  • Cinnamon stick, for garnish

  1. In a medium pot over medium heat, bring milk, cardamom, squash, brown sugar, and allspice to a simmer. Remove from heat and let sit for 5 minutes, then strain through a fine-mesh sieve into a small bowl; discard solids.
  2. Using a frother or small whisk, vigorously mix until frothy, if desired.
  3. Pour espresso into a mug. Stir in salt. Top with foamed milk, then sprinkle with turmeric. Garnish with cinnamon stick.

Real butternut squash puree brings a naturally sweet, velvety richness that pumpkin honestly can't touch, while cardamom, allspice, and a whisper of turmeric give it a spice profile that feels a little more grown-up and a lot more interesting. Brown sugar adds just enough caramel-y warmth to round everything out, and coconut milk wraps it all together in a silky, lightly tropical hug. It's the kind of flavor combination that sounds unexpected until the first sip—and then it sounds like pure genius.

Making the latte: Steam or warm the coconut milk, squash puree, spices, and brown sugar, and pour it all into your favorite oversized mug.

Tuck in a cinnamon stick, take a photo because you've absolutely earned it, and settle in. The PSL had a good run, but the BSL is here to take the throne, and it's not giving it back any time soon.
