This month's midweek meal plan is built for those longer days ahead: five recipes for two, most on the table in 35 minutes or less, with a couple of more relaxed dishes for when the evening allows. These recipes have been carefully selected by our editors to bridge the gap between summer and autumn, pairing the last of the season's courgettes, corn and tomatoes with deeper flavours that suit the cooler days ahead.

Gochujang, garam masala, capers and sherry vinegar act as the week's flavour shortcuts: reliable store cupboard staples that build complexity without stretching your ingredient list. Across the week you'll sit down to a punchy cod and crispy rice traybake, a veggie-packed artichoke and rocket linguine, a well-spiced braised chicken, a bright courgette and feta tart, and high-fibre corn cakes with avocado, eggs and jammy tomatoes for a week of in-between-season eating at its best.
