Skoudehkaris (rice and meat dish)

Skoudehkaris is an aromatic rice and meat dish from Djibouti.

Ingredients · Servings 4
  • 1 pound lamb chunks
  • 2 Tablespoons oil
  • 1 onion (chopped)
  • 1 garlic clove (minced)
  • 1 teaspoon cumin
  • 1/4 teaspoon cloves
  • 1 teaspoon cardamom
  • 1/4 teaspoon cayenne (or to taste)
  • 1/2 teaspoon cinnamon
  • 1 14 oz can diced tomatoes
  • 1 cup stock/ broth or just water
  • 1/2 cup long-grain rice
  • salt & pepper (to taste)
Method · 60 min
  1. In a large pot , heat oil, sauté onions for 2-3 minutes until translucent. then add cumin, cardamom, cayenne, cinnamon and cloves. Continue to cook for a couple of minutes more until onion is tender.
  2. Add minced garlic and continue to cook for another 30 seconds.
  3. Add the meat and stir to brown the meat well from all sides.
  4. Pour in the canned tomatoes, water, cover and let the meat cook until completely done.
  5. Add the rice, salt and pepper and enough water for your rice to cook.
  6. Cover and let it cook until rice is done.

Meat and rice are cooked in liquids flavored with cumin, cinnamon, cayenne, cloves and cardamom. Continue to cook for a couple of minutes more until onion is tender.

Add minced garlic and continue to cook for another 30 seconds. Add the meat and stir to brown the meat well from all sides. Pour in the canned tomatoes, water, cover and let the meat cook until completely done.

Add the rice, salt and pepper and enough water for your rice to cook.
