Ingredients · Servings 6
  • 3 pounds (1.3k) chicken wings
  • 2 teaspoons (2g) thyme
  • 1 teaspoon (6g) salt
  • 1 tablespoon (10g) onion powder
  • 1 tablespoon (14g) garlic powder
  • 1 teaspoon (3g) smoked paprika
  • 1 teaspoon (2-3g) white pepper (or black pepper)
  • ½ teaspoon (1-2g) cayenne pepper
  • 1 teaspoon (3-4g) bouillon powder ((or replace with salt))
  • 2 teaspoons (8g) brown sugar ((optional))
  • 2-3 tablespoons (30-45ml) cooking oil ((for drizzling))
  • Caribbean pepper sauce
  • African pepper sauce
  • Remoulade sauce
Method · 40 min
  1. Wash the chicken wings and dry them with a paper towel. (If you have time, you can air dry them in the fridge.)
  2. In a small bowl, combine thyme, salt, onion and garlic powder, paprika, white pepper, cayenne, bouillon powder, and brown sugar.
  3. Place the chicken on a large plate or bowl, lightly salt, sprinkle with the spice blend, and drizzle with oil (to prevent the chicken from sticking to the grill). Rub the wings in the seasonings to coat evenly.
  4. When ready to grill, wipe down the grill and lightly oil it. Preheat it on medium heat or fill it half full with charcoal and light it about 20 minutes before.
  5. Place the seasoned chicken wings on the grill.
  6. Grill the for approximately 20-30 minutes, flipping every 5 minutes until golden brown. Keep an eye on them because grills tend to flare up when the fat drips. (Try to move them around a bit to prevent flare-ups.)

  • To increase the wings’ smokiness, add a chunk of hickory wood to your grill.
  • Experiment with different spice mixes and sauces to change up this incredible recipe. I love to combine taco seasonings with chimichurri and all-purpose seasoning with Peruvian green sauce.
  • You can make this recipe paleo- and keto-friendly by omitting the sugar. How easy is that?

Make-Ahead and Storage Instructions

You can marinate the chicken wings the day before and keep them in the fridge. Take them out 30 minutes before you want to grill them so they return to room temperature.

These guys also freeze well for 2-3 months, already seasoned and ready to go, in a freezer ziplock bag. Thaw them overnight in the fridge, let them come to room temperature for 30 minutes while the grill preheats, and grill away.

Storing these wings is simple. Just toss leftovers in a Tupperware or airtight container with a lid.

They will stay delicious for about four days in the fridge. When you’re ready to finish off those leftover chicken wings, reheat them in the oven, air-fryer, or the grill.

You could even heat them in a skillet on the stove. Microwaving will work but don’t expect them to get as crispy as before.
