Black Forest Chocolate Truffles

Melt in the mouth chocolate specialty from the beautiful Black Forest region. These easy to make homemade chocolate truffles impress even chocolate aficionados.

Black Forest Chocolate Truffles
Ingredients · Servings 40
  • 7 oz. butter (soft)
  • 1 cup powdered sugar
  • 3.5 oz. semi-sweet chocolate
  • 7 oz. dark chocolate
  • 6-8 tbsp. Schwarzwälder Kirschwasser (alternative cherry brandy)
  • 1 tsp. vanilla extract
Method · 20 min
  1. Whisk soft butter until creamy and light.
  2. Sieve powdered sugar onto to butter and beat until well combined and fluffy.
  3. In a medium-sized bowl melt chocolate either in 30-increments in the microwave (stir after every 30 seconds to prevent burning) or in a double boiler.Add the melted chocolate to the butter-sugar mix and combine well.
  4. Stir in Kirschwasser and vanilla extract.
  5. Cover the bowl and allow to rest for about 1 hour in the fridge.
  6. Use a small cookie scoop or a small spoon to scoop of a small amount of the mixture. Roll between hands to form a small ball. This works best if you wear gloves and occasionally rinse your hands under cold water.
  7. Roll in dark chocolate shavings, cocoa powder or powdered sugar.
  8. Place on a large plate and allow to rest.

Butter

Make sure that you use soft butter. If the butter is not soft enough you end up with a gritty texture.

But don´t use melted butter as this will prevent you from getting the fluffy, light butter-sugar mixture that you are looking for.

Chocolate

Chocolate truffles are only as good as the chocolate you use.

Therefore go for high-quality chocolate that is high in cocoa and not in sugar. Lindt is my personal choice when I am buying chocolate for truffles.

Sugar

Powdered sugar works best for this recipe as it will result in a smooth texture.

If you look for a low carb version you can use a powdered sugar substitute of you choice.

Kirschwasser

Kirschwasser, also known as Kirsch or Kirsch brandy, is not only the best-known German fruit brandy but also probably the best-known noble fruit brandy variety worldwide.

As the name suggests, this brandy is made from whole fermented cherries. If you prefer to don´t use alcohol in this recipe you can substitute for cherry juice.
