German Cheese Cake with Crumble and Fruit

This recipe features a German cheese cake with fruit and streusel aka crumle topping.

German Cheese Cake with Crumble and Fruit
Ingredients · Servings 12
  • 2 sticks butter
  • 4 cups flour
  • 1 cup sugar
  • 1 tsp. vanilla extract
  • 1 egg
  • 1 pinch of salt
  • 1 tbsp. baking powder
  • 3 cups quark (altern. greek yogurt)
  • 1 package vanilla pudding (3.4 oz.)
  • ¾ cup sugar
  • 1 egg
  • 1 tbsp. lemon juice
  • 45 oz. fruit i.e. peaches (apricots, cherries or pears, (canned or frozen))
Method · 55 min
  1. Melt butter and set aside to cool down.
  2. Add flour, sugar, vanilla extract, pinch of salt, baking powder and egg to a large bowl and blend together.
  3. Slowly add the melted butter and mix until crumbles form. Set aside.
  4. Drain the fruit and grease baking pan.
  5. Place ¾ of the dough into the baking pan, spread evenly and press down.
  6. Add quark, vanilla pudding, sugar, the egg, and lemon juice to a large bowl and blend well.
  7. Pour filling onto the dough and spread evenly.
  8. Place the fruit on top.
  9. Then sprinkle the remaining dough as crumbles on top of the fruit.
  10. Bake for 40-50 min. in a 350 F pre-heated oven.
  11. Allow to cool completely and sprinkle with powdered sugar.

This cake can be made with all kinds of fruit, for example pears, apples, peaches, apricots, berries or cherries. This cake can be easily frozen.

Thaw in the fridge and serve with heavy whipping cream. This dessert is a German favorite that has been enjoyed for decades. This German cheese cake is not like the typical cheesecake you are used to.

The three layers of this delicious cake consist of a creamy cheese cake layer on a cookie like bottom, topped with sweet fruit and a crispy crumble topping. The cake should be served chilled or at room temperature. The name "cheese cake" comes from the cheese curds called quark in the custard.

Quark is in taste and texture very similar to Greek yogurt but less tangy and creamier than the yogurt. In case you don´t find quark in your local super market you can easily make it yourself or use Greek yogurt as an alternative.
