Vegetarian summer traybake meal plan

Designed to serve four, every recipe can be ready in under an hour, and two can be easily doubled to feed even more. These recipes have been carefully selected by our editors to prove that hands-off, plant-based cooking is anything but bland.

Bold spices, creamy cheeses and the last of summer's bright produce do the heavy lifting, with the oven handling the rest – leaving you free to get on with your evening. Paneer, halloumi, feta and ricotta provide richness and protein throughout, while chickpeas and butter beans add satisfying substance.

The line-up has range: a fragrant garam masala paneer & broccoli traybake with green yogurt; crowdpleasing hasselback halloumi traybake loaded with roasted veg and chickpeas; one-pan baked feta with summer tomatoes, oregano & butter beans; smoky white bean & ricotta traybake; and golden gnocchi traybake finished with lemony ricotta.
