Olive-tomato-pull-oat casserole

Olive-tomato-pull-oat casserole

Ingredients
  • 2-3dl Riisiä
  • 0,9l Vettä
  • 240g Gold&Green Nyhtökaura (Tomato)
  • 1prk Valkosipulitäytteisiä oliiveja
  • 2rasiaa Kirsikkatomaatteja
  • n. 1dl Oliiviöljyä tai avokadoöljyä
  • 2tl Meiramia
  • 2tl Timjamia
  • 2tl Paprikajauhetta
  • 2tl Suolaa/Yrttisuolaa
  • 2tl Mustapippuria
  • 1tl Valkopippuria
  • 1tl Chilijauhetta
Method · 1 h 30 min
  7. 6. NAUTI!

An easy oven casserole made with rolled oats. The rice comes at the bottom of the casserole, so you don't have to cook it separately as a side dish. I'm not much of a rolled oats fan, but this dish is just good for some reason! I used to always make this with chicken legs or chicken fillets, but at some point I tried swapping the chicken for rolled oats, and it works just as well. The main flavors are tomato and olive.

1. Preheat the oven to approx. 225 degrees.

2. Spread olive oil generously on the bottom of a large baking dish. Sprinkle the rice and rolled oats over the oil. Add the spices and water. NOTE! Do not add the cherry tomatoes and olives yet, as they will not last an hour in the oven without burning.

3. Put the pan in the oven for about half an hour, during which time about half of the water should evaporate.

4. Remove the pan from the oven to add the whole tomatoes and olives on top. You can drizzle some more olive oil, especially on the surface of the tomatoes.

5. Put the pan back in the oven for about half an hour, or until the rest of the water has evaporated and the tomatoes have browned slightly and some have even popped open.

6. ENJOY!
