Qué tener en cuenta al sustituir la crema agria en repostería

Los sustitutos de la crema agria aportan humedad y acidez, pero no todos dan el mismo resultado en el horno.

Sour cream adds moisture and a touch of tang to cakes and muffins. Baking requires precision: small changes in proportions can alter the texture, flavor, and rising. Before substituting sour cream, it's worth considering how the alternative will perform in the bowl and in the oven.

When substituting flour, pay attention to the protein, sugar, and fat content, as these elements influence flavor and texture. A poorly matched substitute can ruin a cake or muffins. Differences in sugar content also affect sweetness and, potentially, appearance. Ideally, choose an alternative with a similar profile; adjusting the recipe is possible, but it complicates baking and can lead to unexpected results.

In brownies, sour cream adds a rich, tangy flavor, increased moisture, and a dense consistency. If you don't have it on hand, homemade sour cream won't taste the same as store-bought, which can affect the final result.

Greek yogurt is often considered the best substitute, although it tends to produce a lighter baked good with less density and richness. If using plain yogurt, straining it gives it a texture more similar to Greek yogurt. Crème fraîche offers a rich flavor that closely resembles sour cream. Cream cheese and mascarpone can also work, but they alter the flavor and lack the tang of sour cream.

Buttermilk provides the necessary acidity, but its fat content is low. It can be useful in a pinch, although it's rarely enough on its own, because sour cream adds moisture without thinning the batter. In that case, it's best to combine it with another source of fat.
