This Chicago-Style Pizzeria Has an Incredible Hybrid Pizza Style
Windy City Pie should be on the radar of every Seattle pizza fan and Chicago transplant. The Phinney Ridge pizzeria is one of the few places in town serving both thin, tavern-style pizzas and deep-dish pies.
What to order
- For the newbs, tavern-style pizza is really thin, almost cracker-like, and cut into little bit-sized pieces. At Windy City, it gets most of its flavor from a surprisingly complex spicy-sweet red sauce. It’s a great option for kids and anyone else leery of bread-heavy pizza style.
- If you like bread-heavy pizza styles, get the Breezy Town. Not as massive and sauce-y as Windy City’s deep dish, the crust is chewy and tangy and has a glorious Maillardized edge all the way around. It’s one of the most impressive feats of pizza engineering in all of Seattle.
- For a break from the cheese, meat, tomato, and bread, try the kale Caesar, which is light, bright, and not overdressed — it’s a salad that lets the kale shine.
Take note
Deep-dish pizza inspires a lot of discourse. For the record, Windy City says its deep-dish pies are inspired by Papa Del’s and Burt Katz’s deep-dish destination Pequod’s, not the more well-known Lou Malnati’s (we’re not from Chicago and do not know what those words mean). If you are unfamiliar with deep dish, it is BIG, casserole-esque, very sauce-forward, and not for everyone.
