From Aztlán to the world: Gastronomic Quadrilateral

In one corner, the flavor, tradition, and legacy of tacos; in the other corner, creativity, culinary techniques, and a deep respect for Mexican gastronomy… They will fight in a best-of-three-falls match with no time limit! This is how the Gastronomic Quadrilateral kicks off, a battle of flavor that runs until April 28 at Aztlán Urban Park.
The Gastronomic Quadrilateral is an event where haute cuisine and tradition step into the ring for a culinary battle. Eight prestigious chefs will compete to create the best taco in Mexico. The competition will take place at Titanes del Taco, the restaurant inside Aztlán Urban Park specializing in one of the country's most iconic dishes: the delicious taco.
In addition to offering a unique gastronomic experience, the event seeks to pay tribute to the culinary richness of Mexico and generate a positive social impact.
A major league competition: heels vs. faces
Inspired by iconic Mexican wrestling, the Gastronomic Ring will divide the chefs into two teams. The "Tecnicos" (Faces): Andrea Lizárraga, Ana Martorell, Federico López, and Xano Saguer. The "Rudos" (Heels): Aquiles Chávez, Carlos Gaytán, Josefina Santacruz, and Sergio Camacho.
Each chef has developed a unique taco recipe, where corn takes center stage. Through innovative ingredients, surprising techniques, and a deep respect for tradition, each dish tells a story in every bite.
“The taco is a cultural expression that evolves without losing its essence. In this competition, we take our creativity to the limit, honoring the tradition of our country's ingredients, as well as its regional culture, to offer the public an unforgettable flavor experience,” commented Federico López, chef organizing the project, participant, and part of the Técnicos team.
The dynamics of the Gastronomic Quadrilateral
In May 2025, the winner of the favorite taco will be announced, along with the winner: the "rudos" (heels) or the "técnicos" (faces). Additionally, a check for 10% of the proceeds from taco sales will be presented to Comedor Santa María, the beneficiary of this great initiative.
Erika Berumen, spokesperson for Aztlán Urban Park, highlighted:
“We seek to offer experiences that celebrate the cultural richness of Mexico. Cuadrilátero Gastronómico is a perfect example of how gastronomy and creativity can merge to give life to something unique, exciting and purposeful.”
An event with a cause: supporting the Santa María Soup Kitchen
Aztlán Urban Park, Titanes del Taco, and the participating chefs are joining forces for a social cause. Ten percent of the proceeds from taco sales will be donated to Comedor Santa María, a non-profit organization that serves more than 10,000 vulnerable children daily, providing them with access to balanced meals and promoting their education and holistic development.
“We are deeply grateful to be part of this initiative. Every taco sold will allow us to continue serving the children in our country who need us most. Let's celebrate Mexico's rich culinary heritage and show how food can unite us and create a positive impact on society,” said the representative from the Santa María Soup Kitchen.
"For me, cooking and gastronomy are like acts of love, so now these acts of love are social causes, and what better way to share them than through food," said chef Aquiles Chavez at a press conference.
