La razón científica por la que lo salado y lo dulce combinan tan bien
La combinación de dulce y salado tiene una explicación biológica en la que influyen el cerebro y el cuerpo.
Deciding whether you want something savory or sweet is one of the hardest choices, but you don't have to choose. Chocolate-covered pretzels, salted caramel, caramel popcorn, or peanut butter and jelly prove just how popular combining both flavors is.
The combination of salt and sugar is so pleasing that it can become addictive, and it's not just a matter of a lack of willpower. It has to do with the chemical makeup of the brain and body.
According to Eater, we crave sugar, which is pure carbohydrate and the body's most basic form of energy, and we crave salt, a micronutrient necessary for normal bodily functions. Combining them satisfies both biological cravings at once, making the brain feel especially happy.
"The combination of salty and sweet is basically a primal instinct that our bodies are designed to crave," James Briscion, director of culinary research at the Culinary Education Institute, told Eater.
How Stuff Works adds that the mixture also helps the brain avoid sensory-specific satiety, that is, the point at which you stop craving a particular flavor after eating it repeatedly. According to the same source, something that is both salty and sweet prevents that feeling of fullness.
