Por qué la cuchara de madera sigue siendo esencial para hacer salsas

Frente a los utensilios modernos, la cuchara de madera, presente en las cocinas desde al menos el antiguo Egipto, sigue siendo ideal para las salsas.

Modern and stylish kitchen utensils dominate gift guides, but it's often the classics that work best. Stirring a pot of sauce with a wooden spoon has a certain nostalgic appeal, and practical advantages too.

When cooking acidic sauces, the non-reactive material of wood doesn't impart unpleasant metallic flavors, as a metal spoon might. Furthermore, a well-used spoon can retain flavor nuances that add a special touch to a tomato sauce or a basic roux, and can subtly enhance the taste of the dish.

Wood is gentle on pans and withstands the flipping, stirring, and pounding required for a sauce. It also doesn't conduct heat, so it doesn't get hot when you take it out of a pot of Bolognese sauce.

To preserve it, avoid putting it in the dishwasher, polish it occasionally with a little lemon juice and baking soda, and moisturize it with mineral oil when it starts to look dry. With this care, it can last almost a lifetime.
