Calor alto o bajo en la olla de cocción lenta: qué cambia en el plato

La olla de cocción lenta cocina con calor suave y continuo, y elegir entre calor alto y bajo cambia el tiempo y la receta.

A slow cooker has a ceramic or stainless steel inner pot inside a heated metal casing, according to Hamilton Beach. Thanks to its low temperatures and heat-retaining lid, most recipes take between four and twelve hours, according to Today. This makes it difficult for food to burn, and it's ideal for beginners.

According to Food Network, the temperature settings are used in very specific ways. The difference lies in the intensity: the range goes from about 170 degrees Fahrenheit on the low setting to 280 degrees on the high, according to the University of Minnesota Extension Service.

Cooking on high heat takes about half the time of cooking on low heat, which offers flexibility. A recipe that takes four hours on high can be made in eight on low. If you start late and the recipe requires ten hours, you can cook for three hours on high and finish for four on low.

Not all recipes allow for that change. Fish, pasta, and delicate vegetables need less time on high, according to Miss Vickie, while tougher meats need more time simmering to soften the connective tissue.

Models vary: they may have a simple selector with "Off," "Low," "High," and perhaps "Keep Warm," or they may be digital and programmable. Multicookers can also be used for slow cooking. Read the manual before using it, and once you've mastered a few recipes, adjust cooking times and temperatures to your liking.

With that foundation, try the slow cooker chili, with its spicy kick from the chili spice blend, or the country chicken with baby potatoes and carrots. There are also whole wheat and spelt Idaho potato rolls, perfect for a festive side dish, or Cajun buffalo meatballs for a spicy appetizer. If you prefer something more substantial, the ham and potato soup is creamy and full of flavor, and a slow cooker roast beef yields incredibly tender meat.
