Cómo remover los huevos revueltos para que no se quemen

Quemar los huevos revueltos es muy común, pero basta con empezar a remover por los bordes de la sartén y avanzar hacia el centro para evitarlo.

Although scrambled eggs seem simple, it's easier to mess them up than to cook them perfectly. The trick requires no extra ingredients or utensils, just a change in your mixing technique: instead of stirring from the center outwards, start at the edges and stir towards the center.

It works because the eggs on the edge of the pan are usually less set than those in the center, and they cook, and overcook, faster. If you stir from the center, the eggs on the edge risk browning too much. That doesn't mean neglecting the center: simply start from the periphery and work your way inwards.

Before cooking, let the eggs rest on the counter for at least a few minutes so they cook faster. Stir them before adding them to the pan to avoid undercooked whites and improve the texture. For fluffier eggs, whisk them; adding a little sparkling water can also help. For a creamier texture, stir with as little air as possible.

Once in the well-greased pan, start stirring immediately. Wide movements will create larger clumps; short, frequent movements will create smaller clumps. When finished, remove them from the pan as soon as possible, because they retain heat and continue to cook.
