Cómo recalentar chuletas de cerdo secas para que vuelvan a quedar jugosas

Para que las chuletas de cerdo recalentadas recuperen la jugosidad, conviene calentarlas en líquido o grasa en lugar de en el microondas.

A good pork chop should be juicy, tender, and incredibly moist, no matter how it's cooked. Reheated in the microwave, on the other hand, it usually becomes dry and tough, and chews like a piece of raw leather.

The rebaking method follows the same process as baking the chops for the first time: they are submerged again in liquids or fats, which keeps them juicy and tender. It takes longer than microwaving, but it's simple. All you need is a baking dish, the leftover chops, and your preferred liquid or fat.

Place the chops as close together as possible in the baking dish and add at least a tablespoon of liquid per chop, such as bacon fat, gravy, or store-bought broth. Cover the dish with aluminum foil and bake at 175°C (350°F) for 30 minutes. Because the liquid and steam prevent the meat from drying out, the result is juicier and more flavorful. It's best to use relatively fresh chops, as those that have been in the refrigerator for a long time can dry out, even in the oven.

For small portions of leftovers, this skillet eliminates the need to preheat the oven. Heat the skillet over medium heat with the cooking liquid (water, broth, or cooking oil) until it comes to a gentle boil. Add the chops and cover for about three minutes. Then turn them over and add more liquid if the liquid in the skillet reduces too much. When the meat reaches an internal temperature of at least 165 degrees Celsius (325 degrees Fahrenheit), serve as usual.

Furthermore, the leftover juices and fat can be turned into a sauce to accompany them. Whether baked in the oven or pan-fried, this results in a juicy and tender chop.
