How to toast hamburger buns according to their type

Toasting the hamburger bun adds texture and smoky flavor, but not all buns withstand the grill well.

Grilling a hamburger on a warm day is incredibly enjoyable: the heat of the grill and the aroma of the meat invite you to savor it. When preparing the perfect hamburger, it's important to decide whether to toast the bun, and that decision depends on the type of bun you choose.

Toasting the buns is a matter of personal preference, but it adds a slightly crispy texture and a smoky flavor that complements the meat. Mark Rosati, culinary director of Shake Shack, told Food & Wine that he prefers firm buns, like the Kaiser, because they hold up well to heat and produce perfect grill marks.

Rosati avoids light and fluffy rolls because they don't always grill well. Very dense and heavy rolls, like bagels or ciabatta, may not absorb grill marks as well, so you have to keep an eye on the cooking time. If you're unsure whether a bread is suitable, it's best to test it on a small amount first.

To toast, brush both sides of each slice with a thin layer of olive oil or melted butter, which prevents sticking and adds flavor. Cut them in half and place them on the grill, cut-side down, for about 30 to 60 seconds, until grill marks appear and the bread is lightly toasted. You can also add herbs or spices, such as garlic or rosemary.

If the bun isn't suitable for grilling or is at risk of burning, it can be toasted in the oven, a toaster, or a pan. In any case, the texture and flavor will improve the burger.
