Change up your morning routine with a hearty breakfast salad

Salads are usually reserved for lunch or dinner, but vegetables can also be an excellent base to start the day with energy.

“I've always loved salad for breakfast. It just feels like a great way to start the day: It's food you can eat and walk away not weighted down.”

Typically, the only salad you see at breakfast is a fruit salad, with berries and melon. A vegetable salad might seem unusual, but it's a way to start the day with energy and vitality without giving up breakfast classics. Vegetables are key to a healthy diet.

Salads are incredibly versatile, because any vegetable you like is a great option. They also make a wonderful base for some favorite breakfasts, such as eggs, fries, and bacon. Starting the day with a salad combines health with a delicious treat.

When you fancy something extra, you can add fried shredded potatoes, which become golden and crispy. The quickest way is to use an air fryer with pre-cooked potatoes from the supermarket, although homemade breakfast potatoes work just as well. Fried eggs on top of the salad add crispy edges and a velvety yolk. Hard-boiled and poached eggs, which allow the yolk to blend with the dressing, are also good options.

Chef Gerardo González, of El Rey restaurant in New York, told Bon Appétit: “I’ve always loved breakfast salad. I think it’s a great way to start the day: it’s food you can eat and leave without feeling heavy.”

Breakfast salad can be varied at every stage. You can use the last cucumber and peppers from the fridge, or add watermelon radishes for color. If bacon and eggs aren't your thing, try smoked salmon and capers with vegetables and goat cheese, a smoked salmon bagel, or crumbled breakfast sausage.
