Por qué no es mala idea guardar las tortillas en el refrigerador
Una vez abierto el paquete, guardar las tortillas en el refrigerador prolonga su vida útil, las mantiene flexibles y frena el moho.
Tortillas are sold at room temperature, and sometimes in the refrigerated section, in packages with more than enough for one meal. If they aren't eaten soon after opening, they can get moldy and go rancid, which ruins any plans to make quesadillas.
Although tortillas keep well at room temperature, storing leftovers in the refrigerator in the resealable bag extends their shelf life and maintains their softness. This ensures consistent quality until the package is finished.
Tortillas are simple. Flour tortillas typically contain flour, water, fat, and salt, and sometimes leavening agents that make them fluffy when baked, usually in a gas oven at between 175 and 260 degrees Celsius. Corn tortillas are made with stone-ground corn, water, and lime. In the market, both types may contain food-grade gums, such as guar gum, to maintain flexibility.
Water and fat are the base of this flatbread, which can be filled in many ways, and this moisture makes it prone to oxidation and mold if left at room temperature. Some manufacturers add preservatives such as potassium sorbate, calcium propionate, sorbic acid, or apple cider vinegar. Even so, refrigeration prevents it from going rancid and inhibits mold growth.
It's best not to leave the package at room temperature for long periods or to frequently take it in and out of the refrigerator. As it cools, moisture can condense inside the package, so it's safest to always store it in the refrigerator.
Before using them, it's a good idea to warm them up to restore their pliable texture, especially if you're making chicken fajitas or enchiladas. You can warm them in a cast-iron skillet with a little butter so they're hot and slightly crispy, or briefly soak them in water before heating them in the skillet so they become moist and don't harden.
In the microwave, simply wrap them in a couple of damp paper towels. If cooking for a large group, you can heat stacks of five to ten tortillas wrapped in aluminum foil in the oven at 175 degrees Celsius until warm to the touch.
