Caramelo y toffee: la diferencia está en la temperatura y la textura

Su sabor es parecido porque comparten ingredientes, pero la textura es lo que realmente los distingue, según la temperatura final que alcanza el azúcar.

Caramel can be simply sugar, but it can also contain butter or cream, sometimes with vanilla extract and salt. The cream adds dairy notes and a milder flavor. Toffee contains butter, sugar, and often a pinch of salt, resulting in a more intense, toasted flavor. Both share some ingredients, which is why their tastes are similar, though they differ slightly.

Texture is what truly sets them apart. It all depends on the final temperature and sugar concentration: as the mixture heats up, that concentration increases and determines whether the caramel becomes malleable (soft ball stage) or brittle (hard crack stage).

To make caramel into a sauce, simply reach the thread stage, between 215 and 235 degrees Fahrenheit. Continuing to cook it to the soft ball stage, between 235 and 240 degrees, results in perfect fudge. A little longer cooking, to the hard ball stage, between 245 and 250 degrees, yields a chewy yet smooth candy.

Toffee requires higher temperatures and skips the intermediate stages: it goes through the hard ball stage, from 250 to 265 degrees, and the soft candy stage, from 270 to 290. Ideally, toffee should reach the hard candy stage, from 300 to 310 degrees, which produces a brittle candy with a noticeable snap. Toffee can also be made in syrup, as in sticky toffee pudding, but it is much more common to see it as brittle candy.

Because of their subtle differences in flavor and texture, both caramel and buttercream blend easily into many desserts. Simply add swirls of caramel sauce to buttercream for a spectacular chocolate cake, or make homemade buttercream for iced, nitro, or cold brew coffee. Spices added at the end of cooking, such as cinnamon for warmth or lavender for a floral note, add character.

For a homemade treat, you can make melt-in-the-mouth salted caramel candies. Caramel also works well in cookie dough as soft pieces, and a cup of chopped salted pine nut caramel provides a crunchy, nutty option. Sweet caramel also makes a great base for spreading melted chocolate with chopped nuts to create homemade toffee brittle, perfect for Passover desserts. Adding caramel pieces to soft desserts, such as ice cream, provides a surprising and intense flavor.
