La base más recomendable para aderezos cremosos de ensalada, según un chef

El chef David Kirschner, director ejecutivo y fundador de dineDK Private Dining, recomienda como base una mezcla de mayonesa y suero de leche, o solo yogur.

When making a creamy dressing at home, the base makes all the difference. Kirschner explained that she has a couple of favorite recipes that she uses frequently. "I like to combine mayonnaise and buttermilk or use just yogurt as a base for creamy dressings," she shared.

Both bases can be used to create a creamy guacamole dressing, a ranch dressing, which, incidentally, was invented by a cowboy, or any other combination. “Buttermilk, like yogurt, adds acidity along with its creamy texture to the dressing” Kirschner explained. “This helps create a complex flavor while still making the dressing light enough to coat all the salad ingredients.”

With yogurt, plain Greek yogurt is the best option due to its thicker consistency compared to regular yogurt, although regular yogurt can also be used. Fat-free Greek yogurt works, but a higher fat content results in a creamier dressing. Those with a milk intolerance or who follow a vegan diet can substitute unsweetened plain coconut yogurt, and plain goat's milk yogurt is another option for those allergic or sensitive to cow's milk.

To achieve a creamy consistency, a hand blender is all you need. Mixing the ingredients with it saves the effort of vigorous whisking and effectively emulsifies the mixture, resulting in a thick, creamy, and well-blended dressing.

If the dressing is too salty, it can be balanced with a naturally sweet liquid, such as honey, pure maple syrup, or agave. These sweeteners, which have a higher viscosity, counteract the saltiness and add smoothness without diluting the texture.
