What chocolate to use in banana bread and how to incorporate it into the dough
According to recipe creator Nicole Johnson, milk chocolate complements banana bread well, and it's a good idea to use two different sizes of chocolate chips.
“Banana bread is sweet already, and the milk chocolate really complements that.”
When asked about the type of chocolate, Nicole Johnson pointed out that the important thing is that the flavors complement each other. "We like to use milk chocolate chips on banana bread," she said. "Banana bread is already sweet, and the milk chocolate complements it perfectly."
Regarding size, Johnson recommends mixing regular and mini chocolate chips: “A mix of regular and mini chocolate chips adds more chocolate and fun textures.” The different sizes hold their shape well while baking and distribute the flavor evenly in each bite, rather than scattering throughout the bread as happens with chunks or a chopped loaf.
Ideally, add the chocolate chips near the end and gently fold them in with a spatula. "You can also sprinkle a few more on top of the bread. Some will sink a little, but that's another reason to use both small and large chips. This will give you a more even distribution." Dusting them with a little flour or cocoa powder creates resistance and prevents them from sinking.
If you prefer a different topping, you can make a streusel with melted butter, oats and sugar, or add crunchy ingredients such as chopped nuts or flaked almonds.
