Birria taco's met kip
Chicken Birria Tacos – These chicken birria tacos are truly so delicious! Wraps filled with pulled chicken, melted cheese, and a spicy chipotle sauce. Perfect for a cozy evening with tasty comfort food. And believe us: you’ll want to make these tacos often!
- 700 gr kippendijfilet
- 8 kleine tortilla’s
- 2 uien
- 2 tenen knoflook
- 50 gr diced chipotle pepper (van La Morena)
- 140 gr tomatenpuree
- 500 ml kippenbouillon
- 2 tl paprikapoeder
- 1 tl komijn
- 1 tl oregano
- 1 tl gerookt paprikapoeder
- snufje peper en zout
- 150 gr geraspte kaas
- 2 handjes verse koriander
- 1 limoen
- Snipper de ui en snijd de knoflook fijn.
- Giet een scheutje olie in een braadpan of diepe hapjespan en bak de kippendijfilet rondom goudbruin.
- Voeg de ui en knoflook toe en bak 2-3 minuten mee.
- Voeg de tomatenpuree toe en bak deze 1 minuut mee.
- Voeg daarna de diced chipotle pepper (evt naar smaak wat minder als je niet van pittig houdt of wat meer) de kruiden en de kippenbouillon toe. Roer alles goed door elkaar en breng aan de kook.
- Zet het vuur laag en laat de kip ongeveer 1,5 tot 2 uur zachtjes stoven met de deksel schuin op de pan.
- Haal de kip uit de pan en trek het vlees met twee vorken uit elkaar. Doe de pulled chicken terug in de saus en roer alles goed door elkaar.
- Serveer de kip meteen op een wrap met bijv guacamole en cheddar of verwarm de wraps kort in de saus (zoals hieronder).
- Verwarm een koekenpan zonder olie. Dip een tortilla kort in de saus en leg deze in de pan. Verdeel wat geraspte kaas en pulled chicken over één helft van de tortilla/wraps. Vouw de tortilla dubbel en bak beide kanten goudbruin en krokant. Herhaal dit met de rest van de tortilla’s/wraps.
- Weinig tijd? Verwarm de wraps dan kort in de magnetron ipv in de pan.
Birria taco’s met kip
700 g chicken thigh fillets
8 small tortillas
2 onions
2 cloves of garlic
50g diced chipotle pepper van La Morena
140 g tomato puree
500 ml chicken stock
2 tsp paprika
1 tsp cumin
1 tl oregano
1 tsp smoked paprika
pinch of salt and pepper
150 g grated cheese
2 handfuls of fresh coriander
1 lime
Preparation method:
Pour a splash of oil into a frying pan or deep sauté pan and fry the chicken thigh fillets until golden brown all around.
Add the onion and garlic and sauté for 2-3 minutes.
Add the tomato paste and fry for 1 minute.
Next, add the diced chipotle pepper (optionally a little less to taste if you don't like spicy food, or a little more), the herbs, and the chicken stock. Stir everything well and bring to a boil.
Turn down the heat and let the chicken simmer gently for about 1.5 to 2 hours with the lid slightly ajar.
Remove the chicken from the pan and shred the meat with two forks. Put the pulled chicken back into the sauce and stir everything together well.
Serve the chicken immediately on a wrap with, for example, guacamole and cheddar, or briefly heat the wraps in the sauce (as below).
Heat a frying pan without oil. Briefly dip a tortilla in the sauce and place it in the pan. Distribute some grated cheese and pulled chicken over one half of the tortilla/wrap. Fold the tortilla in half and fry both sides until golden brown and crispy. Repeat this with the remaining tortillas/wraps.
Short on time? Heat the wraps briefly in the microwave instead of in the pan.
