Broccoli salad

gg medium-aged Gouda (or Gruyère)

Ingredients · Servings 4
  • 1 rote Zwiebel
  • 200 g mittelalter Gouda
  • 200 g Kochschinken
  • 75 g Kernmischung
  • 1 kg Brokkoli
  • Salz
  • 250 g Crème fraîche
  • 1 El körniger Senf
  • 1 Bio-Zitrone
  • 1,5 El Ahornsirup
  • schwarzer Pfeffer
Method · 25 min
  1. Zwiebel längs vierteln und quer in Streifen schneiden. Käse und Schinken in Streifen schneiden. Die Salatkerne in einer Pfanne ohne Fett goldbraun anrösten, abkühlen lassen.
  2. Brokkoli putzen, die Röschen vom Strunk schneiden. Strunk schälen, längs halbieren und in Scheiben schneiden. Wenig Salzwasser in einem weiten Topf aufkochen und Brokkoliröschen sowie -strunk darin 5 Minuten zugedeckt bissfest garen. Abgießen, dabei etwas Kochwasser auffangen und abkühlen lassen. Die Röschen in mundgerechte Stücke schneiden.
  3. Für das Dressing Crème fraîche mit Senf und Ahornsirup cremig rühren, nach und nach Zitronensaft und -schale zugeben, bis eine glatte Sauce entstanden ist. Mit dem aufgefangenen Brokkolisud bis zur gewünschten Konsistenz verdünnen und abschmecken. Mit Pfeffer würzen. Salatzutaten in einer Schüssel mit dem Dressing mischen und abgedeckt im Kühlschrank mindestens 1 Stunde, am besten über Nacht, ziehen lassen.
  • Quarter the onion lengthwise and slice crosswise into strips. Cut the cheese and ham into strips. Toast the salad seeds in a dry pan until golden brown, then let them cool.
  • Clean the broccoli and cut the florets from the stalk. Peel the stalk, halve it lengthwise, and slice it. Bring a little salted water to a boil in a wide pot and cook the broccoli florets and stalk, covered, for 5 minutes until tender-crisp. Drain, reserving some of the cooking water, and let it cool. Cut the florets into bite-sized pieces.
  • For the dressing, whisk together crème fraîche, mustard, and maple syrup until creamy. Gradually add lemon juice and zest until a smooth sauce forms. Thin with the reserved broccoli cooking water to the desired consistency and season to taste. Add pepper. Toss the salad ingredients in a bowl with the dressing, cover, and refrigerate for at least 1 hour, or preferably overnight.
