Fried Maultaschen with beetroot and dill

Beetroot (cooked, vacuum-packed)

  • 500 g Rote Bete
  • 1 Pk. Maultasche
  • 1 weiße Zwiebel
  • 1 Knoblauchzehe
  • 3 El Butter
  • Salz
  • Pfeffer
  • 150 ml Gemüsebrühe
  • 0,5 Tl Speisestärke
  • 0,5 Beete Gartenkresse
  • 4 Stiele Dill
Method · 25 min
  1. Rote Bete abgießen und den Sud auffangen. Rote Bete in kleine Spalten schneiden. Maultaschen dritteln. Zwiebel und Knoblauch fein würfeln.
  2. 1 El Butter in einer Pfanne aufschäumen lassen und die Maultaschen darin bei mittlerer Hitze etwa 4 Minuten braten. Mit Salz und Pfeffer würzen.
  3. 2 El Butter in einer weiteren Pfanne erhitzen und darin Rote Bete, Zwiebel und Knoblauch etwa 2 Minuten bei mittlerer Hitze dünsten. Mit Salz und Pfeffer würzen. Mit Gemüsebrühe auffüllen und etwa 2 Minuten kochen lassen. Aufgefangenen Rote-Bete-Sud mit Speisestärke verrühren, zur Roten Bete geben und 2 weitere Minuten unter Rühren kochen lassen.
  4. Gartenkresse vom Beet schneiden. Maultaschen mit Rote Bete auf vorgewärmten Tellern anrichten. Mit abgezupften Dillspitzen und Gartenkresse bestreut servieren.
  • Drain the beets, reserving the liquid. Cut the beets into small wedges. Cut the Maultaschen into thirds. Finely dice the onion and garlic.
  • Melt 1 tablespoon of butter in a pan until foamy and fry the Maultaschen over medium heat for about 4 minutes. Season with salt and pepper.
  • Heat 2 tablespoons of butter in another pan and sauté the beets, onion, and garlic over medium heat for about 2 minutes. Season with salt and pepper. Add the vegetable broth and simmer for about 2 minutes. Whisk the reserved beet cooking liquid with the cornstarch, add it to the beets, and cook for another 2 minutes, stirring constantly.
  • Cut the garden cress from the bed. Arrange the Maultaschen with beetroot on preheated plates. Sprinkle with dill sprigs and garden cress before serving.
