Breakfast Pizza With Cereal Crust

This breakfast pizza is made with a nutty cereal crust then topped with Greek yogurt and tropical fruits.

Ingredients · Servings 6
  • 4 cups Honey Bunches of Oats with Almonds cereal
  • 1/4 cup coconut oil
  • 2 egg whites
  • 1/8 teaspoon salt
  • 1 cup strawberries - sliced
  • 1/4 cup toasted coconut flakes (see Note 3)
  • 3/4 cup sliced mango (from about half a mango)
  • 2 kiwis - peeled and sliced
  • 1 cup vanilla Greek yogurt
Method · 30 min
  1. Rub a 9-inch baking pan or pie plate with coconut oil. Set aside. Preheat oven to 350°F (180°C).
  2. Place cereal in a blender and pulse for about 5 seconds at a time, 2-3 times until coarsely ground. Alternately, place cereal in a ziploc bag then cover and crush with a rolling pin.
  3. Place ground crushed cereal in a bowl, add in coconut oil, egg whites and salt. Mix well.
  4. Place the cereal mixture in the prepared pan and spread evenly then press down tightly.
  5. Bake the cereal crust in the preheated oven for 10 minutes. Take it out and let it cool completely.
  6. Spread the Greek yogurt over the cooled cereal crust then arrange fruits on top.
  7. Cut into wedges and serve!
