Rico Chicken, an exclusive Peruvian chicken delivery concept in Vancouver
Chef Ricardo Valverde, of the restaurants Suyo and Uchu, opens Rico Chicken, a home delivery concept that applies his ingredient-centric approach to chicken.
“With RICO , we’re giving our attention to a comfort classic. Our chicken and sides are simple, honest, and crafted with the same attention to detail that defines everything we do.”
Chef and owner Ricardo Valverde, the mastermind behind Vancouver's award-winning Suyo Modern Peruvian and its sister seafood restaurant Uchu Cevicheria and Raw Bar, is expanding his offerings with Rico Chicken, an exclusive delivery concept. The team will apply the same ingredient-focused approach to chicken that characterizes his other restaurants.
Each certified organic chicken comes from Windberry Farms in Abbotsford. It's marinated for 24 hours in a blend of yogurt and spices, coated in Rico's signature anticuchero sauce, a flavorful, smoky Peruvian marinade, and roasted at a high temperature. The result is a juicy chicken with a crispy exterior.
The menu focuses on whole and half chickens, served with homemade sides: Peruvian cornbread with butter, garlic rice, baby potatoes with chimichurri, and freshly prepared cucumber, tomato, and avocado salads. Sauces include the creamy Aji Pollero, Tapenade Aioli, the spicy Fuego Baby, and Rico sauce, made with slow-roasted chicken bones and aromatic herbs.
The menu also includes other popular Peruvian dishes, such as arroz con pato (duck with rice), chicharrón de panceta de cerdo (pork belly cracklings), and lomo saltado (stir-fried beef), as well as homemade desserts and traditional drinks. Advance orders are also accepted for corporate catering and group orders.
Valverde explained: “We’ve always enjoyed introducing people to different facets of Peruvian cuisine at SUYO and UCHU. With Rico, we’re paying attention to a comforting classic.”
