Yogurt cake is a classic recipe for learning to cook and a childhood treat. This simple pastry, which doesn't require measuring, is the basis of many culinary memories. It's also a versatile option for adding a touch of sweetness that's easy to personalize.

The rich flavor and soft texture of yogurt cake lend themselves well to various additions. And you don't necessarily need to overcomplicate things to add a memorable twist. We suggest creating a contrast in textures with a light caramelized crust made by sprinkling sugar over the cake before baking.

This seemingly insignificant little trick adds a new dimension to the yogurt cake, with a touch of crunch that surprises the palate. Furthermore, there's nothing stopping you from combining this tip with other ingredients for a yogurt cake that perfectly satisfies your sweet cravings.

The ingredients you need

To prepare a delicious yogurt cake with a thin caramelized crust, you will need (for approximately 6 people):

  • 1 pot of plain yogurt (125 g). This pot will then be used as the reference measurement for the following ingredients.
  • 1.5 cups of white sugar
  • 3 pots of flour
  • 1/2 jar of neutral vegetable oil (sunflower or rapeseed)
  • 3 eggs
  • 1 sachet of baking powder
  • 1 sachet of vanilla sugar
  • 1 pinch of salt
  • 2 to 3 tablespoons brown sugar
  • 1 knob of unsalted butter + flour (for the mold)

The steps to follow

Empty the yogurt container into a mixing bowl. Use the empty container to measure the other ingredients. Add the sugar and vanilla sugar. Crack in the eggs and whisk vigorously until the mixture is pale and slightly frothy.

Next, incorporate the sifted flour that has been previously mixed with the baking powder. Gently whisk to remove any lumps and obtain a smooth, homogeneous batter. Add the vegetable oil and mix again. Once the batter is smooth, pour it into a greased and floured baking pan.

Before baking your yogurt cake, generously and evenly sprinkle the surface with brown sugar. As it melts, this sugar will create the delicious crust that gives this version its unique character.

Bake for 30 to 35 minutes in a preheated oven at 180°C (350°F) (fan setting). Keep an eye on the color so the cake crust browns without burning. Let the yogurt cake cool slightly before unmolding (unmolding while still hot could crack the crust). Transfer it to a wire rack to cool completely before enjoying.
