Why you should turn sardine cans upside down every six months
A can forgotten in a cupboard can offer pleasant surprises years later, provided it is well preserved and turned over every six months.
A can of sardines forgotten at the back of a cupboard doesn't have to end up in the trash. Among some enthusiasts, the older cans are especially prized, because over the years the flesh becomes more tender and the small bones soften.
Some enthusiasts keep their best cans for several years, sometimes up to ten, hoping to achieve a melt-in-the-mouth texture. But simply leaving them on a shelf isn't enough: over time, the oil and moisture don't distribute evenly inside, and the fat tends to settle at the bottom due to gravity.
As a result, some areas of the fish may not be as evenly coated with oil, and the texture may not be as uniform as expected. The solution is simple: turn the can upside down every six months so the oil redistributes around the sardines. Noting the purchase date and marking the can's orientation makes it easy to track the process.
Sardines in olive oil are usually the preferred option for long-term preservation. They should be stored in a dry place, protected from light and, above all, from sudden temperature changes, and the box should remain intact. A room at a temperature between 15 and 20 °C is ideal, and under these conditions, some enthusiasts age their cans for between three and ten years.
This does not mean that canned fish can be stored without precautions. The U.S. Department of Agriculture recommends a five-year shelf life for commercially available canned fish. Some products may still be edible after their expiration date if they have been stored properly and the can is in perfect condition, although their quality may gradually deteriorate.
Before opening an old can, it's a good idea to examine it carefully. If it's swollen, leaking, has significant rust, or deep deformations, especially near the seams, it should be discarded. The six-month rule only applies to unopened cans: once opened, any remaining sardines should be stored in an airtight container in the refrigerator and consumed within three to four days.
Therefore, turning the cans over regularly is especially helpful for those who want their sardines to mature for several years. It's a simple step that can make all the difference when a can has been sitting in the pantry for a long time.
