Sweet retro: Grated cheesecake is amazingly easy. But firm up the dough in the fridge
Sweet retro is not about complicated cakes and desserts, but about traditions and classics that we like to remember. The recipe for grated cake is passed down from generation to generation in families, so let's enjoy it together.
We all know grated cakes. The basic recipe is a cake with cottage cheese filling, but there are many different variations, both with and without fruit. Following the clear video tutorial, even a complete beginner can bake this dessert.
How to make an easy grated cake
To prepare a retro grated cake on a baking sheet measuring approximately 30 × 40 cm, you will need the following ingredients:
- For the dough: 400 g plain flour
- 1/2 baking powder
- 120 g powdered sugar
- 250 g fat (e.g. lard)
- 3 tablespoons cocoa
- 1 egg and fat to grease the baking sheet
- For the filling: 750 g cottage cheese, semolina sugar to taste, 2 eggs, 3 tablespoons rum, 1/2 vanilla pudding powder and 250 ml milk.
- Sift the plain flour, icing sugar, cocoa and baking powder onto a work surface and mix. Make a well in the centre of the mixture and add the chopped fat and eggs.
- Mix all the ingredients into a non-sticky and soft dough. Place it in a bag and let it rest and harden in the refrigerator for about 1 hour.
- Meanwhile, cook a thick pudding with milk and vanilla pudding powder according to the instructions on the package. Let it cool, stirring occasionally. If you want to prevent a skin on the pudding, just cover it with cling film.
- Separate the yolks from the whites and beat the whites until stiff peaks form.
- Mix the cottage cheese with the sugar, egg yolks and rum, then fold in the cooled pudding. Finally, lightly fold in the egg whites to keep the filling fluffy.
- Preheat the oven to 180°C and grease a baking sheet.
- Coarsely grate half of the cooled dough evenly onto the prepared baking sheet. Spread all of the cottage cheese filling over the dough and grate the other part of the set dough onto its surface.
- Place the cake in the preheated oven and bake for approximately 35-40 minutes. You can check if the cake is cooked through with a skewer. If it comes out completely dry with no dough sticking to it, it is done. Otherwise, let the cake bake for a little longer.
- Let the baked grated cake cool completely. Then cut it into individual slices, dust with powdered sugar and serve.
Tip: Don't be afraid to add fruit to your dessert - both fresh and compotes work great in this cake. There are no limits to your imagination and tastes.
